Breakfast Sausage Spinach Pie Recipes

Ingredients

  • 1/2 pound Bob Evans® Original Sausage
  • 1 (9 inch) unbaked pie shell
  • 2 cups shredded Swiss cheese
  • 1 cup spinach, chopped
  • 3 eggs, lightly beaten
  • 1 1/2 cups half and half
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon nutmeg
  • 2 tablespoons grated Parmesan cheese

Directions

  1. Preheat oven to 375 F. In medium skillet over medium heat, crumble and brown sausage until cooked. Place into pie shell, and top with Swiss cheese and spinach. In bowl, combine eggs, half and half, salt, pepper and nutmeg. Pour over sausage mixture. Sprinkle with Parmesan cheese. Bake for 30 to 35 minutes or until a knife inserted into center comes out clean. Let stand 10 minutes before serving.
